You see, we got a new Henckels knife set:



And as I was putting the steak knives into the dishwasher and thought to myself "oh! These are much sharper than the other shitty knives we've had, what with their forged stainless steel fancy shit and all. I should really turn them upside down when I go put the other knife in!"
And of course while I bent down to put the other knife -- this time, sharp side down -- I managed to impale my left hand on the original (bastard) knife.

I now have a wound in my hand that hasn't stopped bleeding for half an hour, and I'm thinking that super-gluing it is probably a good idea.

It might be inherently sterile, what with the whole nightmarishly toxic chemical content. Good for closing major wounds though, I've done that before. Perhaps viciously cleaning the wound before applying the adhesive will be sufficient.

The knives are fucking awesome.

I didn't realize how awesome until I compared them to the other shitty knives we had. The steak knives are fantastic, the old ones we had made filet seem tough they were so dull; but now I find excuses to help J cook because chopping is so much fun. I can mince shallots and garlic with one pass instead of having to chop and re-chop like I did before. They were, I think, about $180 for the set, but worth every penny. I just wish it came with a larger serrated knife, but there's a couple open slots to add on so I'm sure I can buy it separately.

We also got this set:


It's anodized stainless steel I think with Thermolon nonstick coating, (which doesn't scratch like Teflon!) and all of it's ovenproof so you can go straight to the stovetop to the oven. It's every bit as good as Calphalon, but we got a smaller set for about half the price. I think the six piece set was about $100 on sale.

Cooking with them is amazing. Unfortunately we have an electric stove, but these pans almost make up for it with the way they perform.

OMG electric stove/ranges are fucking HELL ON EARTH! those pans look amazing. I am in the market for a new set of pans. I figure after all the work i have put in on the fucking stove.. I should treat myself with some nice pans.

Electric ranges are pretty awful to cook on.
I've blown up one gas stove, shorted out two electric stoves, and burned down another gas stove, so I tend to stay away from the actual cooking process if I can. Gas is definitely far superior when it comes to how pans conduct heat, and it's much easier to adjust temperatures mid-recipe.

I don't eat meat so no overly sharp knives over here. When the need arises for sharp knives, well I've learned how to use a shaving blade for shit.

the me 10 years ago wants to slap the me now for getting so excited over cookware...but it really does make a huge difference. The stainless looks amazing. there are some things like that left on our registry with macy's and we just found out starting next week they will give us 20% off everything we did not get off of the registry. i'm thinking that would be a good time to make the investment.
i feel like i can take on the people on "top chef" with my new found chopping abilities that come with sharp knives.

What do you mean "overly sharp"?

I don't chop meat, kiddo. The only time I use one of those knives for meat is if I'm using the steak knife to carve up my filet, ribeye, or strip steak. The rest of the time I use them for vegetables, and since you seem to not know, yes, it's preferable to have a sharp knife in order to prepare your vegetables as well. Ever tried to cut an onion or a shallot with a dull knife? How about a tomato? I'd rather be able to slice my food than have to mash through it with a dull shitty knife.

Get off your throne. You're no martyr for being a vegetarian/vegan/whatever.

I never claimed to me a martyr or anything... All I said in my post was that I'm a vegetarian so I don't have really sharp knives. Like I have sets of knives but they aren't really sharp enough that I could impale my hand with them... I mean maybe it's because they are old but like if I did it would be really slow and hard.

I've got sharp tools, just not sharp knives.

I do think knives look sort of cool though. Like if I where to ever hypothetically forced to murder someone, I think I would use a butcher knife.

Jeez you guys need to chill. I always thought we had no super sharp knives in the house because they where for cutting meat. I don't know I guess our set's just really old I mean we've had it for a while.

i bought a set of furitechnic knives (rachel ray shills for them). they are really sharp and very comfortable to use.

i have Emeril pans that i bought at Macys, they are nice to cook with.

I have a furi chef knife. it is totally comfortable. those thermolon pans are ridiculously nonstick. the first time I made pancakes in one the batter just floated around in a glob. I boggled.

I think those are CROMOV series stainless. That type of steel takes a keen edge and holds it reasonably well, but not as well as the VG-10 Shun uses. You have to re-align the edge on a kitchen steel frequently to keep that keen edge. The advantage of CROMOV is that it's very rust resistant, and tough.

The stamped knife you have is probably carbon steel, which will generally outperform most other steels until you get into the higher end stuff, or is thin enough that it continues to use like it's sharp when it's relatively dull.

They sell coated carbon steel knives now which aren't bad, if you can get past the bright primary colors. I'm still getting around to upgrading the large utility knife in the kitchen to something out of VG-10 or 154CM, or at least AUS-8. I still really want the Shun:

What the hell are you doing with a straight razor?

Sharp knives in the kitchen are always good, vegetarian or not. It's great to be able to slice bread instead of sawing at it with a serrated knife until it seperates.

i got a set of Anolon knivesa few years ago, it was the best thing i could have done for my kitchen. i have had to do my share of scolding people to not put them in the dishwasher however.
